It's been an entire year!?! Yes, its true... I havent even looked at my blog for over a year! Since then, I have discovered Pinterest and Love. What else do I need right?
Here is a little story about OUR love story. Me and my Fiance Hiram have known each other for close to 5 years. 2008 was when we first met and talked to each other. He worked Summer sales for an alarm system company and worked with a guy that I went to High School with. That is how we first heard of each other. Little did we know we would actually run into each other just a few months later! At the time I was writing a guy who was on his mission (Not waiting ladies! I still had plenty of fun dating :) ). I decided I would run into missionary mall and see what kind of ties they had there. Funny enough... that's where Hiram was working at the time! We both knew that we recognized each other but couldn't remember how. Neither of us said anything to each other the whole time though. Another guy was helping me and Hiram was manning the cash register. I checked out and went on my way. I guess Hiram kept telling himself that he knew me from somewhere and looked at the receipt to find my name. Thats when he remembered little ol Shayla from good ol Tuley Utah! (Its not really pronounced Tuley... Its spelled Tooele and pronounced Too-el-uh. Trivia Time!)
Why didnt we start dating at that time? Well....... Hiram had a serious girlfriend and I wasnt looking for anything serious. My goal was to be a doctor and I honestly didnt really want to get married. I was taking 20 credits and plucking away at college as an A++++ student. Guys used to tell me I was the prettiest smart girl they had ever met. (In other words, I intimidated them. A lot.) I remember going home that night and seeing a message from Hiram saying something like "Hey were you at missionary mall? I think I saw you there, I work there." Something like that! Of course nothing played out because we both had separate lives.
Life went on, he broke up with his girlfriend, I studied. He left every summer for summer sales, I studied. He lived down in Provo, I studied... in Salt Lake. Basically our lives NEVER intertwined. We stayed connected through texts, phone calls, and Facebook every now and then. Fast-forward 4 years later- Hiram was out in Tuley (remember our Trivia from earlier!) he decided to call me and ask me out to lunch! I had a voicemail on my phone and a missed call from Hiram. I decided to call him back and sure enough on March 17th St. Patrick's Day of 2012 we went on our first date! I NEVER in a MILLION years thought I would go on another date with him. Since we had met back in 2008 a lot of things had changed in my life. Becoming a single mom was the biggest. How on earth could somebody you had a crush on since 2008 possibly like you after all this stuff that had happened since then?
Well, our 2nd date was REAL soccer that next weekend, the next one was the next weekend, the next, the next, and the rest is history in writing! Hiram was SOOO CUTE! I don't remember how the exact conversation went but after our first few dates he was ready to be together. I had been especially hesitant about those types of things after my son was born and my whole life I had only ever had 1 boyfriend which just HAPPENED to be after my son was born. I'm telling you, I never wanted to get married! Not until I had a little guy and new that he needed a dad and I needed a husband, but even then I wasnt too rushed to find someone. I thought maybe the little guy would be 10 before I married. It was just a few weeks later when I realized, I am falling in love! I knew it was love because I had never experienced that with anyone else. You love your kids but its a different kind of love. That's when I knew... uh... I have to have this guy! I said to him one night "So when can I start calling you mine?" That was it! He has been my best friend ever since through all our struggles and hard times! He proposed September 29, 2012 on one knee and of course, I SAID YES! We are getting married in less then one month and I can't wait! Its been a stressful time for both of us.
I'm graduating from college in a few weeks! YEEEE HAAAA! I read a statistic that said only 10% of single moms graduate from college and only half of those graduate with a bachelors degree or higher. I knew I had to be part of that 5%! I DID IT! Hiram opened his own Branch with American Family Insurance on April 1st. We have been planning a wedding.... lots of stressful times! A lot of learning lessons and we have come to learn how to get through tough times TOGETHER. Something a lot of couples don't experience until they are already married. We are in it for the long hall! We only get to see each other on the weekends and I can't wait to see each other every day! My little guy is going to have THE BEST dad in the world and I really mean that. I may never know how I got so blessed to have such an amazing man in my life. I honestly never knew men like him existed. Sorry ladies! I may have just taken the best man on the planet earth and I'm keeping him!

Yummy, HEALTHY, Breakfast!?!
Yes, its true.... I've come up with my very own healthy breakfast! Well.... errr sort of. Healthier than some other breakfast items! I have been on this killer diet over the last month and I have lost over 10 pounds! GO ME! But... being on this diet makes it harder to come up with meal ideas, especially breakfast. Lately, its been yogurt, EVERY morning. Today, I decided to come up with something yummier! The result.... this amazing delicious EASY breakfast snack.
Ta Da!! Now... now... let me tell you how to make it....
To Start: Preheat oven to 375 degrees
1-You need a potato, I used ONE big baker potato, you can use 2 smaller ones if you dont have a large one. Peel potato and then shred using a cheese grater.
2- 1 Tomato, I used about half and diced it into small pieces
3- The picture shows 2 eggs but I ended up putting another one in for a total of 3 eggs. (If you like eggs I highly recommend adding more than 3. I dont necessarily like eggs that much so mine was more about the potato)
4- Green onions, one stalk, diced
5- Bacon, I ended up putting 4 pieces in (cut into small pieces) and would have added more, but because of my diet I couldnt do very many. 6 pieces would probably be great for a non crazy dieter. ;) Also... I REALLY wanted to use sausage on this recipe but we didnt have any! Next time I'll use sausage for sure!
6- Add salt and Pepper, I cant really tell you how much, because I forgot to add this myself. Uh oh!! I recommend adding a pinch and then you can always add more later if you think it needs more.
Put everything into a large bowl...
Mix everything together....
Now here is the great part! Spray a muffin tin with pam spray and taking a spoon, dish the mixture into the pan.
Cook for about 25-30 minutes.. and ta da!! Yummy goodness!
Here is the result! Mine was a little dryer (because I'm NOT an egg person) but it was SOOO good! I ate about 3 of them. Perfect!
